We've had a bit of a cold spell here in the last few weeks and all I've felt like eating is warm, homey, comfort food. You know that food that makes you want to curl up with a blanket, some fuzzy slippers, and a good book. Well this recipe is where it's at. Let me just tell ya. If you're not eating it in your slippers, you'll for sure and for certain want to run and get them the minute you're done.
I don't know how to convey to you how much I love this beef stew recipe. It's taken me years to find one that is worthy to post and this is like the exclamation point of all those years of waiting for it to come into my life. Normally when I share a pressure cooker recipe I like to share some alternate cooking methods for those of you without pressure cookers. I'm sorry to break it to ya this way, but you are totally on your own on this one. Adapt to your hearts content, but I don't think you'll be able to replicate the amazing-ness that comes from the performance of the pressure cooker here. I've only made it in an electric pressure cooker, but I'm quite certain it would work just fine on a stove top as well.
The beef comes out melt-in-your-mouth tender, cooked to perfection. And the veggies are neither to crunchy or too soft. They are perfection in all senses of the word. Love, love, love this recipe. It will be appearing on our dinner table again mighty soon.
Beef Stew {Electric Pressure Cooker Recipe}

*Serves 5-6
INGREDIENTS:
3 Tbsp. olive oil
1/2 Cup flour (white, wheat, gluten-free, your pick!)
1-1/2 tsp. salt
1/2 tsp. pepper
2 pounds Beef (stew meat, chuck roast, or other cut), cut into 1" cubes
2 Cups beef stock
1/2 tsp. paprika
1/2 tsp. dried rosemary
1/2 tsp. thyme
1 bay leaf
1-2 onions, chopped (about 1 Cup or more if desired)
1 garlic clove, minced
6 carrots, cut into 1" pieces (about 2 cups)
4 large potatoes, cut into 1" pieces (about 3 cups)
2-3 celery stocks, cut into 3/4" pieces (about 1 cup)
Salt, to taste
DIRECTIONS:
Turn electric pressure cooker on "brown" and add olive oil. Mix flour, salt and pepper in a large bowl. Add beef cubes to bowl and coat well with flour mixture. Pour beef cubes and remaining flour to heated pressure cooker and stir every few minutes until beef is browned on all sides. When beef is brown add beef stock, paprika, rosemary, thyme, bay leaf, onions and minced garlic. Stir well then lock lid in place on pressure cooker and cook on LOW pressure for 10 minutes. When time is up, let pressure release naturally. Then open lid carefully and add carrots, potatoes and celery and stir together. Replace and lock lid in place and cook on LOW pressure again for 10 minutes. Again allow the pressure to release naturally before opening lid. Taste and add additional salt, if desired. Serve immediately and enjoy!
