Chicken Taco Meat {Electric Pressure Cooker Recipe}

Today I'm sharing another wonderful Pressure Cooker meal that can be made quickly and simply. I love quick and easy dinner meals. This one was fabulous because everyone in my family ate and enjoyed it. The chicken was tender and juicy and full of flavor. I secretly ate the leftovers for lunch the next day. These tacos are delicious served with Cilantro Lime Brown Rice.

In a small bowl, combine the tomatoes, water, chili powder, salt, minced onion, paprika, cumin and cornstarch. Pour over the chicken in the electric pressure cooker. Close and lock lid. My first recipe in my new pressure cooker. I added garlic, and it was great. Only took 10 minutes in a traditional (non-electric) cooker. Will definitely make this again. Thanks!

Thanks for sharing your adaptations. I will definitely try it with the garlic next time as well.

I'm so glad I found this site. As an author, I'm always on a tight deadline and needed help cooking fast meals. I recently bought a new electric pressure cooker. Never wanted one before because I was scared silly of them....you know...the old ones they used to use on the stove. I've only made one thing in it so far and that was a pork roast with cream of mushroom soup, carrots, and potatoes. Found that recipe on youtube. *smiling*
Anyway, I'm on my way to the store to buy the ingredients for the chicken taco meat. Can't wait to try it. Thank you for sharing your recipes.

This recipe tastes like authentic Mexican cooking. First night I made tacos and the second night I put one chicken breast in the pressure cooker with all the ingredients for the sauce and after cooking it I added the sauce with the leftovers from night before. Then made enchiladas. Used Mexican cream on top. Fabulous! I will make this again and again! Seriously, make enchiladas with this recipe, just double the sauce ingredients,
