Homemade Whole Wheat Tortillas

For those that have been following my blog, you know that I've been trying to make whole-wheat tortillas for my family instead of buying the store kind. I've tried several recipes, but today I made one that was superb! I'm very excited about it because it's just what I'm looking for. There were just a few, basic ingredients. The dough was very elastic just like a bread dough and they rolled out beautiful. They cooked up perfect and tasted delicious. I guess the only test left is if they store well and I'll find out that this week. Meanwhile, here's the recipe - it actually originated from my sister-in-law's recipe in our family cookbook. I modified it a bit to make it whole-wheat. Here's what I came up with:

Whole-Wheat Tortillas
2 scant tsp. salt
1/3 C. oil
3 C. Whole-wheat flour

Place above ingredients into bosch mixer and mix with dough hook. Meanwhile heat up 2 C. water in microwave until very hot. Start adding water gradually into Bosch until starts to pull away from the sides (I didn't use the full 2 Cups). Let mix 6 minutes. Turn off mixer and let dough rest 5 min. Break off small round balls about 2 inches in diameter. Then roll the dough out into the shape of a tortilla. Place the tortilla into a flat skillet pan on medium heat. Rotate when air pockets start to form or until slightly brown around air pockets. You will know if you overcooked the tortilla because it will be stiff like a cracker. Make sure your tortillas are very bendable. Better to undercook than overcook.

Your welcome - thanks for your comment. I love this recipe. It is by far my favorite. Today I had a burrito using one that I made 6 days ago and the tortilla was still moist and pliable and absolutely delicious! I stored mine in an airtight bag in the fridge and they keep very well.

Alena,

I've never tried freezing them. But I know a lady who said her mom freezes tortillas. She cooks them and then freezes them with a sheet of wax paper between them. She said it works really well.

Hi Heather, I recently found your blog and love it. I cook a lot from scratch and enjoy your ideas and insight.

Are you still making these whole wheat tortillas? Have you been happy with how they have continued to turn out?

We currently make 100% all purpose flour tortillas each week and it's our biggest use of all purpose flour.

I just listened to Chef Brad speak about Wonder flour this week and just bought/ground the grains today. I'm very anxious to experiment with the flour for tortillas as every attempt at tortillas with WWF has been terrible.

Hi Emily,

We do still make this recipe a lot with 100% whole wheat flour. I haven't had much time to experiment with wonder flour with it, but I'm curious to find out how it goes. I love the whole wheat tortillas but my family is kind of so-so about them (they go in and out of liking them and not liking them) so I'm looking for another alternate recipe with whole grains. The main thing with the tortillas is that you need to make sure the dough is really moist and make sure you under cook your tortillas.

I love chef brad! He's doing amazing things with grains and that's neat that you got to attend his classes. I hope to be posting again real soon...I've been taking the summer off, but I've got lots of neat ideas and neat recipes that I've been cooking. Take care and happy cooking!!
